PREPARATION METHOD
1. If it's a fresh octopus first we must soften the octopus 2. There are two ways to this: 3. You can either beat it with a wooden bat or rolling pin 4. Or freeze the octopus by -20C prior cooking 5. Wash, peel and cut the vegetables in dice 6. Put the onion in water and bring to boil 7. Plunge the octopus in the boiling water and cook it for 45mn.
8. Remove from fire and let it cool down in the liquid 9. Take the octopus out from the water and refresh 10. Strain the cooking broth 11. Cook the potato cubes in the octopus broth
12. Dice the octopus in medium dice (same size as the potatoes 13. When the potatoes are cooked (they should not fall apart) 14. Mix the potato with the octopus and season with smoked paprika and salt. 15. Add olive oil on top 16. Prepare a vinaigrette and serve the vinaigrette on side
