Wash and peel all vegetables

In a large pan sear the chicken and squid

Add the green peas

Season with paprika powder, salt and saffron

Add the tomatoes in Brunoise

Add the rice and stir well

Fill up with the stock and stir

Bring to simmer

Cook in the oven for 25mn

Add the pimentos and the seafood

Place in the oven for another 10mn

Make sure all liquid has been absorbed

22.

Rest the paella covered for 5 more minutes before plating

Plate in a large deep plate

Decorate with lemon wedges
