Blanch all the vegetables a bit less than all dente 8. Poach the prawn, snails and the fish in a court bouillon
THE SAUCE
9. Mash the potatoes 10. Chop the garlic 11. Soake the bread in a little water and olive oil until completely soft 12. Mix the bread potato and garlic 13. Add the salt 14. Mash with mortar or blender
15. Once smooth, add the egg yolk 16. Pour the oil bit by bit while blending 17. The sauce looks like a mayonnaise when finished
